Shake, Wait, Enjoy!

The idea of working with lactic cultures may sound daunting, but don’t be intimidated. We tried our hand at making homemade yogurt and it’s easier -- and much tastier -- than we ever imagined.

We had a lot of help from EasiYo. We used the New Zealand company’s yogurt maker and its pre-mixed yogurt starter packs. The yogurt maker couldn’t be any easier to operate -- there are no electronics, no moving parts. The EasiYo packs come in all sorts of flavors and contain a yogurt base made from top quality milk powder (the milk EasiYo uses comes from grass fed, hormone-free cows in New Zealand). To create a fresh batch of yogurt, all it takes is a few easy steps: combine the yogurt pack with cold water in the yogurt jar; pour boiling water into the yogurt maker; place the yogurt jar inside the maker and cover it; wait for 10-12 hours or overnight until the yogurt is set.

If you’re wondering what’s going on inside the yogurt maker, here’s the scientific explanation: Lactic cultures require heat to grow and a source of milk sugar (lactose) on which to feed. Using the boiling water, the EasiYo yogurt maker produces the optimal heat needed to reactivate the freeze-dried lactic cultures in the base packs.
